Prep Time: 10 minutes
Resting Time: 3 hours
Servings: 6

Ingredients

  • 4-6 ounces blue cheese
  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon Frank's Red Hot, optional
  • 1/2 teaspoon sugar (I use Monkfruit)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon Italian parsley, finely chopped, optional
  • Milk or half-and-half to thin it out
  • Salt to taste

Instructions

  • Crumble the blue cheese and set aside
  • Add the mayonnaise, yogurt, and 4 ounces (1/2 cup) of the blue cheese to a bowl. Mash the blue cheese into the yogurt and mayonnaise using a fork or a small masher.
  • Add the vinegar, lemon, Worcestershire, hot sauce, garlic, pepper, sugar, and parsley to the bowl.
  • Mix well and add an additional 2 ounces of blue cheese crumbles.
  • Cover the dressing and let it hang out in the fridge for a minimum of 3 hours.

Notes

Make this at least a few hours in advance for the absolute best flavor.
The dressing will thicken as it sits, so you may need to add a splash of milk or water to thin it out.
Just before serving, adjust any of the ingredients you want.
If you don’t have white vinegar, apple cider vinegar will work, or feel free to use all lemon juice.
If you don’t have lemon juice, use white vinegar.
Instead of parsley, feel free to use chives or the tops of scallions.
