15 Minute Cherry Tomato Onion Salad Recipe

A simple tomato and onion salad that showcases gorgeous, ripe cherry tomatoes, perfect for summer BBQs and outdoor dinner parties!

Ingredients

  • 1 pint cherry tomatoes
  • 1/2 small red onion
  • 1/4 cup extra-virgin olive oil oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

For The Dressing

  • Add the olive oil, vinegar, and oregano to a mixing bowl.

For The Salad

  • Using a mandolin, slice the red onion very thin.
  • Add the sliced onions to the Dressing and stir well.
  • Slice the larger cherry tomatoes in half, and leave the smaller ones whole.
  • Add the tomatoes to the dressing along with the onions.
  • Stir well, taste, and add salt and Pepper to your liking.
  • Enjoy immediately or let it hang out at room temperature for 30 minutes to let the flavors come together.
