Ingredients
16ouncesbowtie pasta
16ouncesbacon
1cupchopped tomatoes
3green onionsfinely chopped
1cupmayonnaisefull fat
2tablespoonsred wine vinegar
1/2teaspoonblack pepper
1/2teaspoonsalt
Instructions
Cook the bacon until crisp and drain well.
Cook the pasta according to the directions on the package. Drain and rinse well with cold water.
While the bacon and pasta are cooking...
Add the mayonnaise, vinegar, tomatoes, green onions, salt, and pepper to a big bowl.
Stir well and add the bacon followed by the pasta.
Taste and adjust the seasoning.
Serve immediately or cover and chill.
Notes
The juice from the tomatoes is part of the dressing. You WANT the juice. The dressing will look too loose. It's not. Once you add the pasta, it soaks it up!Make the dressing first and THEN add the pasta. It allows the flavors to develop and is easier to mix up.This recipe is easily doubled or triple
