Pork Bowl: Easy Recipe Using Leftover Pulled Pork
My easy pulled pork bowl is one of my favorite ways to use leftovers. It’s a quick breakfast that’s high in protein, low in carbs, and delicious!

- 1/2 cup shredded pulled pork
- 1/2 cup cottage cheese
- 2 large eggs
- 1 cup kale, chopped
- 5 cherry tomatoes
- 1 scallion, thinly sliced
- Optional: Bagel seasoning
Reheat the pork and add it to a bowl.
In a small skillet, wilt the kale and white part of the scallions. Add them to bowl with the bowl.
In the same pan, cook the eggs to your liking. Add them to the bowl.
Add the cottage cheese and tomatoes.
Garnish with the top part of the scallions and bagel seasoning.
