Pork Bowl: Easy Recipe Using Leftover Pulled Pork

My easy pulled pork bowl is one of my favorite ways to use leftovers. It’s a quick breakfast that’s high in protein, low in carbs, and delicious!

Ingredients

  • 1/2 cup shredded pulled pork
  • 1/2 cup cottage cheese
  • 2 large eggs
  • 1 cup kale, chopped
  • 5 cherry tomatoes
  • 1 scallion, thinly sliced
  • Optional: Bagel seasoning

Instructions

  • Reheat the pork and add it to a bowl.
  • In a small skillet, wilt the kale and white part of the scallions. Add them to bowl with the bowl.
  • In the same pan, cook the eggs to your liking. Add them to the bowl.
  • Add the cottage cheese and tomatoes.
  • Garnish with the top part of the scallions and bagel seasoning.
