Ingredients

Salad Ingredients

  • 1 15.5 ounce can of chickpeas
  • 1/2 cup English cucumber, diced
  • 1/4 cup yellow pepper, diced
  • 1/4 cup sun-dried tomatoes in olive oil, chopped
  • 2 scallions, thinly sliced
  • 2 tbsp chopped Italian parsley
  • 1 tbsp capers, drained

Viniagrette Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • 1/2 tsp Monkfruit sweetener
  • 1/4 tsp cumin
  • 1/4 tsp Aleppo pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp sea salt

Instructions

  • In a large bowl, add all of the dressing ingredients. Whisk to combine.
  • Add all remaining ingredients to the bowl.
  • Gently toss all the ingredients together.
  • Taste, and adjust the salt pepper.
