Leftover fried rice? I’m sharing ways to turn it into a whole new and delicious meal that your family will love!!
I don’t think I’ve ever told you guys how much I love Asian food. Next to Italian, Asian food is my favorite – and my family’s too. In fact, when my daughter was growing up, plain old white rice with soy sauce was her favorite snack. One of my favorite ways to use up leftover fried rice is to simply plop a runny fried egg on it the next morning. If you haven’t tried it, do it!!!!
Homemade fried rice is time-consuming.
You must start with cooked, cold rice. This usually means making it the day before, and sometimes you just want fried rice and don’t have time for all that! So, when Ling Ling reached out to me about their new line of frozen fried rice entrees, I couldn’t wait to try them out!

I was pleasantly surprised by the size of the package! Each box comes with two 8-ounce bags that were more than enough to feed my family. I also love this packaging because sometimes you just won’t need both bags. For a super quick meal, you can pop it in the microwave, and it’s ready to eat in less than five minutes. That said, cooking it on the stove results in a crispier, more authentic fried rice texture, so that’s what I’d recommend.
One of the first things I noticed is that the meat was real meat. Y’all know what I’m talking about. Have you ever taken a bite of something that’s supposed to be meat but aren’t quite sure what you’re eating? These are moist and delicious chunks of real beef and chicken. The shrimp was perfectly cooked and not rubbery at all, which is quite an accomplishment for a frozen entrée!
The vegetable was my favorite because it was full of perfectly cooked, fresh veggies! I loved that the corn was fire-roasted!
Leftover fried rice is ready to go!
Leftover fried rice already has tons of flavor and vegetables, so it’s easy to use in something else. Here are some of my favorite things to do with it.
Leftover Rice Omelet: The fancy name for this is omurice, which just means wrapping the rice in a layer of thin egg. I just make a regular omelet, fill it with some rice, and top it with a little sriracha and green onions. You could add bacon or sausage too.
Crispy Rice Cake: Mix one cup of the rice with one egg and one teaspoon coconut flour. Place a small, non-stick skillet over medium heat and let it get hot. Add a little olive oil and pour in the rice mixture. Spread the rice in an even layer, turn the heat down to medium-low, cover, and let it cook until it’s lightly brown and crispy, which should about 5 minutes. Carefully flip it over, uncover, and let it cook for another 4-5 minutes or until it’s golden brown on the second side. Serve with a little sour cream or top it with a drippy egg! I’m a texture girl, so I was crazy for this. LOVED the crispy edges!
Miso & Rice Soup: Use a good quality miso paste to whip up a bowl of broth, some of the rice, and whatever else you want. I usually keep it simple and throw is some edamame for protein and top it with green onions! A good quality miso paste will cost at least $10, but it lasts a long time and is worth every penny!
You can also use it in lettuce cups, stuffed squash, frittatas, burritos, and egg rolls. Use your imagination!
