If I’m being honest, I didn’t plan on posting this. When I got home from my walk yesterday, I was starving and wanted something quick. All I had was leftover cooked chicken, so I whipped this up, and now this high-protein chicken dip recipe is a new family favorite!
Fire-roasted is the secret to this dip’s amazing flavor. It’s one of my favorite shortcut ingredients because it’s not just tomatoes but includes peppers, onions, and other spices. It adds flavor and eliminates the need for all of those different ingredients. I used it in my one pot cabbage and beef, and it’s also the secret ingredient in this smoky cheese dip with shredded beef.

- Chicken. Any cooked chicken works. My meal-prep chicken thighs would be perfect for this.
- Greek yogurt. This makes it nice and creamy while adding extra protein and keeping it light.
- Cheddar cheese. Sharp cheddar adds a ton of flavor, and smoky, garlicky, fire-roasted salsa.
- Scallions. The white part has a nice onion flavor, and the dark green top adds a pop of freshness.
Pro tip. I use Siggi’s Skyr in most of my recipes. It’s similar to Greek yogurt but thicker and creamier, with a little more protein. The protein content across brands might surprise you, so if that matters to you, you might want to check labels and compare.
High Protein Chicken Dip Recipe

This chicken dip recipe is so easy that I can hardly call it a recipe, but here’s a quick rundown!
- Dice or shred the cooked chicken however you like. For this recipe, I like it in small dice.
- Add the chicken, scallions, salsa, cheese, and Greek yogurt to a microwave-safe dish.
- Stir well, then microwave on high for 30 seconds. Repeat that process until hot.
- Taste and adjust for salt and pepper, if desired.
- Enjoy immediately with your favorite chips, crackers, or veggies.
Pro tip. It’s better to heat this gently in 20- to 30-second increments, depending on your microwave. If you let it go too long, the hotspots can actually cause the dip to separate. Be patient, microwave it for 20 or 30 seconds, stir well, and repeat. You want the cheese melted, but the residual heat will continue to melt it, so you can actually remove it from the microwave before it fully melts. This is meant to be served warm, not scorching hot.
Tips & Variations
- For meal prep, add the prepared dip to a container, and microwave it when you’re ready to eat.
- This would be even better with black beans or corn, and they would add more volume.
- Add crushed red pepper, cayenne, or even your favorite hot sauce if you like things spicy.
- Smoked paprika, garlic powder, onion powder, or cumin all add a kick of flavor.
- Use whatever cheese you like. My son loves it with pepperjack!
- I like the tang that Greek yogurt adds to the dip, but sour cream is a great substitution.
- Store in the refrigerator and consume within three. I do not recommend freezing once heated.
