5 Ingredient SUPER Easy Chicken Dip Recipe

Five simple ingredients and about 10 minutes are all you need to make this chicken dip recipe. It’s creamy, smoky, and loaded with protein.ย It’s no secret that I’m passionate about food waste, so much so that I wrote a whole post about it. So, when it comes to solving the problem of what to do with leftover chicken, this is one of my go-tos.

It’s easy to customize, gluten-free, and can be dairy-free with a simple ingredient swap. You can eat it as a chip dip or scoop it up with veggies for a high protein low carb lunch!

As written, this is meant to be a single serving, but if you’re feeding a crowd, use the adjuster on the recipe card below to increase the servings. To make it even easier, you could put it all in your slow cooker for an easy crock pot dip.

If I’m being honest, I didn’t plan on posting this. But in an ongoing effort to just be as authentic as possible, I’m learning to let go of perfection. I’m not a professional photographer, and I like food to look like anyone can make it. This chicken dip recipe isn’t the prettiest, but it’s delicious, easy, and a great way to repurpose a little cooked chicken. It takes less than ten minutes!

Fire-roasted is the secret to this dip’s amazing flavor. Salsa, in general, is one of my favorite shortcut ingredients because it already includes peppers, onions, and other spices, eliminating the need for all those different ingredients. I used it in my one-pot cabbage and beef, and it’s also the secret ingredient in this smoky cheese dip with shredded beef.

Easy Chicken Dip Recipe

Since my husband travels for work, I’m always looking for ways to make meals for one person. I often make my easy roasted chicken thighs and freeze them into single-serving portions for quick meals. I LOVE theseย freezer-safe containers for that, by the way. If you’d like to double or triple the recipe, you canย change the number of servings in the recipe card below by hovering over the serving number.ย The ingredient amounts will automatically adjustย for you.

Ingredients Youโ€™ll Need

Ingredients

Five ingredients are all you need to whip up this easy chicken dip recipe. As always, detailed instructions are included in the recipe card below.

  • Chicken. Any cooked chicken works. I used leftover meal-prep chicken thighs.
  • Greek yogurt helps make the dip creamy while keeping it lower in calories.
  • Sharp cheddar cheese adds creaminess and cheesy flavor.
  • Fire-roasted salsa adds a punch of flavor and helps loosen up the dip.
  • Scallions. The white part has a nice onion flavor, and the dark green top adds a pop of color and freshness.
Fire Roasted Salsa

A Flavor Booster

Fire roasted salsa does the heavy lifting in this recipe. Packed with the flavors of tomatoes, onions, garlic, chiles, and spices, it eliminates the need for separate ingredients, giving the dip a deep, smoky flavor!

How To Make

This chicken dip recipe is so easy that I can hardly call it a recipe, but here’s a quick rundown!

  • Dice or shred the cooked chicken however you like.
  • Add all of the ingredients to a microwave-safe bowl.
  • Stir well, then microwave on high for 30 seconds.
  • Repeat that process until the dip is hot and the cheese is melted.
  • Taste and adjust for salt and pepper, if desired.
  • Enjoy immediately with your favorite chips, crackers, or veggies.

Heat the dip gently in 20-second increments, stirring well between each cooking interval to prevent hotspots that can cause the dip to separate. The cheese should be just melted. This is meant to be served warm, not scorching hot.

Tips & Variations

  • For meal prep, prepare the dip, and microwave it when you’re ready to eat.
  • Stretch the dip by adding a can of black beans or conr or both.
  • Add crushed red pepper, cayenne, or your favorite hot sauce to spice it up.
  • Use whatever cheese you like. My son loves it with pepperjack.
  • I like the tang of Greek yogurt, but sour cream is a great substitution.
  • Store in the refrigerator and consume within three days.
