I’m shooting this yogurt parfait recipe on the first day of Fall, and even though it’s still 80° here in Nashville, I’m feeling all the Fall feels! When I posted my high-protein yogurt bowl recipe, several of you asked about fiber, and that couldn’t have come at a better time. Recently, I’ve been trying to get more fiber into my diet, and this recipe delivers on taste, texture, protein, and fiber!
The truth is, I’ve never prioritized fiber until recently. My cholesterol has been going up every year, and while several things may be causing that, like menopause, low vitamin D levels, and an unhealthy gut microbiome, not getting enough fiber could be one of them.
Why Is Fiber Important?
First, I am not a doctor, and we should all be careful about who we take health advice from. Social media is full of so-called experts who are most certainly not experts. You should always do your research before adding a supplement to your diet.
Here is what’s been helping me and some things I’ve learned from trial and error.
- Go slow. If not, it can cause gas and bloating, and your gut will not be happy. My goal was 40 grams of fiber daily, and it took me about a month to get there.
- Use a supplement. You need soluble and insoluble fiber, and getting both types from food is hard. Many fiber supplements are on the market, and what works for one person may not work for another. You may have to try several brands before finding what works best for you. This is the fiber supplement I use daily. It is pure soluble fiber and has been very gentle on my gut. I get the insoluble fiber I need from foods like apples, kale, peas, potatoes, and black beans, just to name a few.
- You must hydrate. Fiber quite literally works with the fluid levels in our body. It absorbs water. If you aren’t adequately hydrated, you can quickly become constipated.
This yogurt parfait recipe with apples and granola delivers 48 grams of protein and 18 grams of fiber! Enjoy it immediately or prep the yogurt mixture beforehand to have it later. Dice the apple just before serving. The yogurt mixture can be stored in the refrigerator for up to three days.

Ingredients You’ll Need
A few ingredients are all you need to make this delicious, healthy, high-protein breakfast or snack, which will keep you feeling full and satisfied for hours!
- Skyr yogurt. At this point, you guys all know my love for Skyr. It’s an Icelandic-style yogurt with a little higher protein than regular Greek yogurt and is loaded with probiotics. Use your favorite Skyr or Greek yogurt. Just know that different brands will slightly change the macros. In this case, one cup of Skyr provides 22 grams of protein!
- Vanilla protein powder. I use this brand in the yogurt parfait recipe because of its exceptionally clean ingredients and delicious flavor. I tried countless brands of protein powder before finding Levels. I had virtually given up on it, but then tonsil cancer happened, and it’s one of the things that helped me get the nutrients I needed daily.
- Apple. One small apple provides approximately 3 grams of fiber, essential nutrients, and antioxidants. I left the apple raw because I wanted a lot of texture in this parfait, but feel free to cook it like I did in this recipe.
- High-fiber granola. Use what you like, but if you prioritize fiber, compare labels and choose one that suits your needs. I love this one for its clean ingredient list, great taste, high fiber, and healthy fats. Just a half cup in this parfait adds 12 grams of fiber!
- Cinnamon. I’m obsessed with cinnamon and use it daily in my coffee. The list of health benefits is long, especially if you’re using the correct type of cinnamon. They are not all created equal, and Ceylon cinnamon has been found to have less coumarin and a higher amount of antioxidants.
- Sea salt. Everyone knows by now that salt brings out flavor. It can make sweet foods taste sweeter. I love unrefined sea salt, which has natural electrolytes and minerals. You only need a tiny pinch in this parfait!
- Fiber powder. As discussed above, half a scoop of fiber powder adds 4 grams of fiber to this recipe. It easily mixes into the yogurt without affecting the consistency at all. I would leave this out if you’re starting your fiber journey.

How to Make This Yogurt Parfait Recipe
This takes 10 minutes to make and can be eaten right away or pop a lid on it and take it to work. I suggest leaving the granola off and adding it to the top just before eating so it stays crunchy!
- Gather all of the ingredients. Once you dice the apple, it will brown quickly, so it helps to have everything ready to assemble.
- To make the yogurt mixture, add the yogurt, protein powder, and fiber to a bowl. Whisk until smooth and set aside.
- Dice your apple, leaving the peel on or not. I leave it on because the skin contains many nutrients, including most of the fiber.
- Add 1/3 of the yogurt mixture to the bottom of your glass, followed by 1/3 of the apples, a pinch of cinnamon, and a tiny pinch of salt.
- Repeat that process two or three times, depending on how many layers you prefer. I did three layers but used most of the ingredients in the first two.
- Enjoy!
Helpful Tips
- Once you dice the apple, it will quickly turn brown, so it helps to have all the ingredients ready before you start.
- Depending on the size of the apple, this can quickly become a huge parfait, so I like to use the smallest one I can find unless I’m making one for my husband, too.
- When you first start mixing the yogurt and protein powder mixture, it will look like it won’t combine. Trust the process and keep mixing. It will become smooth and creamy within a minute. Different brands of protein powder can be much drier than others, so you may need just a touch of water to smooth it out.
- Mixing the yogurt, protein powder, and fiber powder first allows the mixture to hydrate as you prepare everything else. Give it a stir every 30 or 60 seconds as you prepare the other ingredients.
Variations
- I’ve never been a big fruit eater. I chose apples in this yogurt parfait recipe because they’re one of the few fruits I enjoy eating. Use whatever you like, but raspberries, blueberries, and blackberries are all excellent options if you prioritize fiber.
- For the granola layer, you could use any high-fiber granola or cereal. However, depending on the type of cereal you use, it might get soggy quicker, especially if it’s flaked.
- You can use any protein powder you like or leave it out. Even without the protein powder, the yogurt provides a decent amount of protein, and the apple and granola provide fiber.
- Alternatively, if you don’t prioritize fiber, leave the fiber powder out and use any granola you like!

Ingredients
